Nutella and Orange Whoopie Pies

Makes 15 Whoopie Pies

Preparation: 30 min. Cooking: 10 –15 min. Chilling time: 1 hour

For the cream filling:

  • 1 orange
  • 75 g (5 tbsp) unsalted butter
  • 50 g (1/4 cup) caster/superfine sugar
  • 1 egg
  • 75 g (1/3 cup) Philadelphia-style cream cheese

 For the whoopie pies:

  • 125 g (1-3/4 cups) plain/all-purpose flour
  • 1 tsp baking powder
  • 40 g (3 tbsp) unsalted butter
  • 40 g (scant 1/4 cup) caster/superfine sugar
  • 1 egg
  • 100 g (scant 1/2 cup) Nutella
  • 20 g (2 tbsp) cocoa powder
  • 100 ml (scant 1/2 cup) semi-skimmed milk
  • a pinch of salt

1. Preheat the oven to 180 degrees C (350 degrees F/Gas 4).

2. Make the cream filling. Finely grate the orange zest and squeeze the juice. Melt the butter in a bain-marie or in a bowl over a pan of simmering water. Add the sugar, egg and the juice and zest of the orange. Beat continuously until the mixture thickens. Remove from the heat and leave to cool. Beat in the cream cheese; then chill for 1 hour.

3. Make the whoopie pies. Mix together the flour, baking powder and salt. In a separate bowl, beat together the butter and sugar. Add the egg, Nutella, cocoa powder and milk. Mix well then add the flour and baking powder mixture.

4. Place 30 small spoonfuls of the mixture on a baking sheet covered with baking parchment. Bake for 10–15 minutes. Remove from the oven, leave to cool on a cooling rack, then sandwich together with the cream filling.

Crunchy Cocoa Nib, Mandarin and Roasted Beet Salad

Cocoa CRUNCH! 

For me, crunch is essential in a salad. So I usually toss in some toasted sunflower seeds, croutons, or for special occasions, cocoa nibs (also known as cacao nibs), which add a savory dark-chocolatey bite. Balsamic vinegar and cocoa nibs dance especially well together – a perfect pairing of sweet, tart and bitter.

Essentials and options: Just three main ingredients are essential to this salad: roasted beets, mandarin oranges, and cocoa nibs – plus the dressing. Mandarin oranges are typically marketed these days as Clementines or Cuties. Other good (and optional) salad add-ons: goat cheese or feta crumbles; toasted walnuts or hazelnuts; toasted sunflower or pumpkin seeds; chopped Italian parsley or cilantro; and lettuce or other greens, like arugula, spinach or baby greens.

Dressing: The dressing is a basic balsamic vinaigrette laced with cocoa powder and cinnamon. Taste and tweek, then drizzle. Don’t forget to show off how pretty this dish is before mixing and serving.

Roasted Beets: No roasted beets on hand? Make them a day or three in advance: Rinse 3 to 4 large beets, trim off the leaves, wrap each beet separately in foil, and set in a baking dish (I use a glass baking dish, to catch any juices that may leak). Roast at 400 degrees F. (375 degrees if using convection mode), for about an hour, or an hour and 15 minutes if plump. They should be tender when pierced with a knife tip, but a bit under- or over-cooked won’t hurt them. Let them cool in the foil. Refrigerate until ready to use. You can refrigerate them in their foil for several days, and use them as you wish. Be careful: beets stain, so store them in glass or ceramic (not plastic). Handle with gloves, or coat your fingers with oil before handling.

Ingredients

  • 4 to 5 cups cleaned greens (lettuce or other greens)
  • 1 to 2 roasted beets; trimmed and sliced
  • 2 to 4 mandarin oranges, peeled and separated into sections
  • 2 ounces crumbled goat or feta cheese (optional)
  • 1 recipe Cocoa-Balsamic Vinaigrette (below)
  • 2 tablespoons cocoa nibs
  • Sea salt
  • Coarse ground pepper

Cocoa-Balsamic Vinaigrette

  • 4 teaspoons extra virgin olive oil (go for gusto)
  • 4 teaspoons balsamic vinegar
  • 1-1/4 teaspoons cocoa powder
  • 1/4 teaspoon ground cinnamon
  • 2-1/2 teaspoons honey

Assemble the Salad

Layer the greens on a platter or salad plates. On top of the greens, arrange the oranges, beets, and cheese (if using). Be artistic.

Combine all vinaigrette ingredients; stir or whisk thoroughly to blend in the cocoa powder and cinnamon. Drizzle over the salad. Sprinkle on the cocoa nibs, salt, and pepper to taste. Voila! Serve as a main dish with hot and hearty bread, or as a side dish.

Orange-Spiced Tea with Organic Lime-Maté Boost 

Makes 1 serving; about 120 mg caffeine

If you prefer tea to coffee and savory to sweet, this is the bumped-up brew for you. One cup packs more than twice the caffeine of regular black tea, with a balanced citrusy taste that’s neither bitter nor sweet. The sophisticated flavor is one that’s good to sip on, and the brew surpasses coffee when it comes to the morning jolt.

The Guayaki Yerba Mate Organic Energy Shot is a bit pricey at over $3 for 2-ounces, but you can use part of a bottle and refrigerate the rest for up to 5 days. It’s handy for customizing your buzz level: 1 tablespoon contains 35 mg of caffeine. (One 2-ounce bottle = 4 tablespoons, or 12 teaspoons). I like the flavor, and it doesn’t have that faux-sweetener aftertaste found in other energy shots.

In this recipe, orange-spiced black tea (like Constant Comment) meets half a bottle of Guayaki’s lime-tangerine flavored mate energy shot, which injects 70 mg of caffeine to the tea. Assuming an 8-ounce cup of brewed black tea contains 50 mg of caffeine, then this bumped up brew boasts a minimum of 120 mg of caffeine – more than in a cup of coffee.

Recipe:

  • 1 (8-ounce) cup brewed orange spice black tea [about 50 mg caffeine]
  • 1 fluid ounce (about 2 tablespoons) Guayaki Yerba Maté Organic Energy Shot, Lime Tangerine flavor [70 mg caffeine]

Stir the maté shot into the hot tea. Enjoy it plain or add sweetener as desired.

Note: The caffeine content of tea depends on many factors, including how long it’s brewed and the type of tea leaves. This book uses 50 mg of caffeine as an average for black tea, but one 8-ounce cup can range from about 15 to 75 mg.

Look closely: Sunkist Orange Soda is even more caffeinated than Pepsi Cola, while Pepsi Max and Sun Drop Citrus Soda zoom to the top of the chart – they’re bubbling close to the FDA’s legal limit for caffeine in soft drinks (71 mg per 12 ounces).

And: Ounce for ounce, Pepsi Max and Sun Drop have twice the kick of Coca-Cola.

How do these numbers compare to coffee? Caffeine in coffee and tea varies, but for this book, the rule of thumb is: an average cup of coffee contains about 100 mg of caffeine, and an average cup of tea contains about 50 mg of caffeine. Starbucks lists their Grande brewed coffee at 340 mg caffeine.
